Easy White-Cut Chicken Legs (Bai Qie Ji)
The dish Cantonese grandmothers judge each other with, made foolproof with just legs and a pot.
The story
White cut chicken is about one thing: silky, just-set meat with glossy skin. Restaurants poach whole birds with ice baths and rituals. Legs poached low-and-slow then shocked in cold water get you 90% of that texture with 10% of the effort.
Ingredients (5 + pantry staples)
- Chicken leg quarters or thighs bone-in — 2 lb / 900 g
- Ginger — 3 slices + 1 tbsp grated for the dip
- Scallions — 3, for the dip
- Toasted sesame oil — 1 tsp
- Soy sauce (optional dip add) — 1 tbsp
Pantry staples used (don't count toward the 6): salt, cooking oil (2 tbsp for sizzling). Not stocked yet? See the pantry page.
Steps
- Simmer chicken with ginger slices in water to cover, 18–20 minutes at the lowest bubble; turn off heat, rest 5 minutes.
- Transfer to cold water for 5 minutes (this is the skin trick). Chop or shred.
- Dip: pile grated ginger and scallions with 1 tsp salt, pour 2 tbsp hot oil over, add sesame oil. Serve chicken with dip and rice.
Swaps
Same dip on blanched greens, noodles or tofu makes three more dinners. Leftover poaching liquid = tomorrow's soup base.
